When I try to add text in photoshop the text comes out the same color as the background and I set the text color way different from the background color.

What editting mode are you in? I don't know the exact menu name, but check up at the top in the various menus, and find the one with the drop down menu with an option that says "Mode >". Check and see what mode you are in. See if you are in RGB Color mode or something like that. If you aren't, switch to that and try it out. If not, then I don't really know...
